Our Winemaking Philosophy
At NIYO, we blend time-honored Old World techniques—such as hand-harvesting and small-batch aging in French oak—with innovative approaches. For example, we incorporate modern advancements to enhance grape quality and efficiency throughout the winemaking process.
After harvest, our expert winemakers meticulously sort, select, age, taste, and blend to ensure that each bottle reflects the highest standards and captures the essence of our estate.
Our Cherished Vines
The vineyard was first established in 2001, driven by a vision to create world-class Bordeaux-style blends. Over the years, we have broadened our repertoire, now producing a diverse selection of wines, including Rhône varieties. Throughout this journey, we have deepened our understanding of viticulture specific to this remarkable region and expanded our vineyard acreage, all while upholding a commitment to sustainable farming practices.
The Essence of Our Soil
NIYO soil, enriched with fossilized limestone from ages of marine deposits, provides an exceptional foundation for crafting robust red wines. This limestone content induces a natural stress on the vines, encouraging them to produce grapes that vividly showcase their varietal characteristics.
Our Unique Climate
Paso Robles boasts a unique microclimate characterized by the most significant day-to-night temperature variations of any grape-growing region in California. The warm days allow grapes to cultivate deep, intense flavors, while the cool nights contribute to a well-structured and balanced profile.
